HKB – Hong Kong Baijiu
Just as Hong Kong is a point of contact with China, HKB is the point of contact with baijiu.
Baijiu is the most widely consumed distillate in the world, yet no-one in the West has heard of it.
HKB is produced by fermenting and distilling cereals, after which it is left to rest for at least two years in large holes in the ground.
HKB is the first baijiu to be enjoyed by people who have Western tastes and is distilled by a small producer in Sichuan Province. In fact, this area is ideal for producing baijiu since it has a mild climate all the year round and the soil is very fertile thanks partly to natural springs located in the nearby mountains.
The result is a modern-style baijiu, perfect for mixing, and excellent in classic or innovative cocktails.
To the nose it has a delicate perfume with hints of red fruits, green apple and erbe di prato: wild grasses. The flavour is sweet, attractive with subtle fruity undertones. The after-taste is long and fragrant.
